The first step in making maple syrup is collecting the sap. The years of lugging heavy buckets to waiting barrels have given way to the use of tubing.

Sap is collected using tubing and taps that are inserted in the tree in the spring.  The tubing is left in place all year round, and flushed out before & after using.  The vacuum pump back at the sugar house helps pull the sap through the lines to the pressure tank.  Maintaining the lines can be a challenge, as windy days can knock branches onto the lines, and squirrels like to chew on the tubing to get at the sweetness inside.
